

Unlike many commercial operations, our lambs are often given a full year to mature. They travel for under an hour to be humanely killed and the carcass is then hung for at least 10 days. This process is essential to tenderise the meat and allow its full flavour to develop but is often ignored by the big producers. You can taste the difference; there is a herby tang and a blackberry sweetness to all our meat.
